2 c. cooked, mashed sweet potatoes
c. sugar
tsp. salt
tsp. ground nutmeg
tsp. ground allspice
tsp. ground cinnamon
1 T. butter (melted)
3 eggs
c. milk
⅔ c. maple syrup
1 tsp. vanilla

Directions:
Directions:
Combine sweet potatoes, sugar, salt, nutmeg, allspice, cinnamon, and butter. Stir well and set aside. Beat eggs. Gradually add milk, maple syrup, and vanilla. Stir until well blended. Gradually stir egg mixture into sweet potato mixture. Pour into 9 in. pastry shell. Bake at 425 for 10 minutes, then 325 for 1 hr. and 5-10 minutes until knife blade comes out clean. Serve with shipped cream.
