3 eggs
2 cups sugar
3 cups flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 1/2 tsp salt
1 cup coconut
1 cup oil
3 cups grated zucchini
2 tsp vanilla
1/2 cup chopped walnuts

Directions:

beat eggs, sugar and vanilla together

sift flour, baking powder, soda, cinnamon and salt

add dry ingredients to egg mixture

add zucchini, coconut, oil and nays mixing well

grease and flour pans or usr wax paper on bottom of pans

bake at 325º for 1 hour - test for doneness - knife comes out clean

DO NOT OVERBAKE!!!
