2 3/4 cups flour
Salt and ground pepper to taste
Pinch ground cinnamon
3/4 cup water
1 lb zucchini
Vegetable oil for deep frying

Directions:
Directions:
Place 1 3/4 cups flour in a medium sized mixing bowl with the seasoning and cinnamon
Make a well in the centre of the flour mixture and pour in the water mixing with a fork
Until batter is thick, smooth with no lumps
Cover batter and refrigerate for 2-3 hours before using
Trim zucchini then cut into 1/8 inch thick slices
Dip zucchini in flour, then toss a few at a time into the batter
Heat oil and deep fry zucchini in batches for 3-5 minutes, or until crisp, golden and cooked through.
Remove from oil with slotted spoon and drain on paper towels
Serve hot
