1lb Chicken Tenders/or P&D Shrimp
Salt & Pepper
1/2 tsp Garlic Powder
2Tbsp Olive Oil
1 Stick (1/2 cup) Butter
2 Tbsp Minced FRESH Garlic
1/4 tsp Red Pepper Flakes
1 1/2 tsp Salt, divided
1/2 Cup Dry White Wine
1 1/2 Cups uncooked White Rice
3 Cups Chicken Broth
1/2 Cup Fresh Grated Parmesan Cheese

Directions:

Season Chicken with Salt and Pepper. Heat Oil in a large non-stick skillet over medium. Saute the chicken until nicely browned, and just cooked through. Remove Chicken from skillet, cover and set aside.

Add Butter, garlic, red pepper flakes and 1/2 tsp salt to the skillet and saute the garlic for 3 minutes, careful not to burn or become too brown.

Increase skillet temp to medium high and add the white wine, stir vigorously with a wooden spoon to emulsify the wine with the butter. Cook and stir for about 5 minutes or until the mixture is reduced by half. Remove and set aside 2 tbsp of sauce to use later.

Add rice to skillet with the remaining butter sauce and stir cook for 3-4 minutes or until the rice begins to brown, add chicken broth and the remaining 1 tsp of salt bring to a boil, reduce the heat to medium low and cover. Let the rice cook until tender approx 20 min.

Sprinkle the parmesan over the rice and arrange the chicken/shrimp on top and drizzle the set aside sauce over it. Sprinkle more parmesan cheese on top and serve immediately
