4 chopped carrots
1 chopped onion
1 clove minced garlic
1 T ground cumin
1 tsp. ground coriander
½ tsp. ground cayenne pepper (or a few shakes of hot cayenne pepper hot sauce)
4 cups beef broth
2 16oz. cans black beans
½ cup rice
½ dry sherry

Sour cream and shredded cheese for topping.

Directions:

In a large kettle, cook the onion, carrot, and garlic over a moderate heat in a bit of oil, stirring until soft. Stir in cumin, coriander, and cayenne pepper. Cook while stirring for 1 minute. Add broth and beans (including liquid). Bring to a boil. Lower heat, cover, and let soup simmer for 25 minutes. Add rice and stir. Cook another 20 minutes or until rice is soft. Stir in sherry and serve.

You can make this with brown rice as well. Add it when you put the beans and broth in and cook the whole thing for 45 - 50 minutes or until the rice is soft.
