4 1/2 oz (125 g) dark chocolate, chopped
1/4 cup (50 g) coconut oil
3 eggs
1/2 cup dark brown sugar
3/4 cup (90 g) all-purpose flour
1/4 cup (30 g) cocoa powder
pinch of salt
4 oz dark chocolate chunks

1. Preheat the oven to 180 degrees Celcius

2. Melt the dark chocolate and coconut oil together. Set aside.

3. Whisk the eggs and sugar until pale, fluffy and tripled in volume. This will take about 5 - 7 minutes.

4. Slowly drizzle in the melted chocolate while whisking on low speed. Whisk until the chocolate is fully incorporated.

5. Sift the flour, cocoa powder and salt into the mixture, and gently fold in the dry ingredients (using a spatula) until no clumps remain.

6. Stir most of the chocolate chunks into the brownie batter, then transfer the batter into the prepared baking pan. Smooth out the top, and sprinkle over the rest of the chocolate chunks and chips.

7. Bake in the preheated oven at 355 ºF (180 ºC) for 18 - 20 minutes, or until an inserted toothpick comes out with moist crumbs attached (for fudgy brownies) or even with some half-baked batter attached (for gooey brownies).

8. Cool completely before serving

You must whisk your sugar and eggs for a very long time. If you don't, the brownies will be flat. There is no chemical leavener, so we are relying on the air being whipped into the eggs to make the brownies rise.
