1 3/4 C flour
1 C sugar
1.5 t baking powder
3 eggs
1/3 C dried cranberries
1/2 C whole almonds
1/2C chocolate chips
zest of one orange

Directions:
Directions:
Preheat oven to 325 degrees
Line baking tray with parchment paper
Mix flour, sugar and baking powder
Add rest of ingredients except eggs and toss.
Add eggs and mix well. Add a bit more flour if needed to form rollable dough.
Divide into 2 pieces
Roll each piece in a cylinder about 2 dm think.
Flatten rolls with hands.
Bake for 20- 30 minutes until golden brown.
Take out and let cool for 10 minutes. Turn oven down to 275 degrees.
At 10 minutes cut rolls on the diagonal.
Lay CUT SIDE UP on baking tray.
Bake 10-15 minutes.
Cool on wire rack and then store in air tight container.

Personal Notes:
Biscotti means twice baked. They will last a long time if stored correctly. You can exchange the cranberries and nuts for equal amounts of other similar items.
Not only are these great with coffee but also with mulled wine.
