Homemade Pickling Spice

1 cinnamon stick (about 4 inches) broken into pieces
5 bay leaves
2 tablespoon mustard seed
1 tablespoon whole allspice
1 tablespoon coriander seeds
1 tablespoon whole black peppercorns
1 tablespoon ground ginger
1 tablespoon dill seeds
2 teaspoon cardamom seeds
1 to 2 teaspoon hot pepper flakes
1 teaspoon whole cloves

In a small glass or stainless steel bowl, combine all ingredients. Stir well. Store in a 4 oz. jar or an 8 oz. jar, or another airtight container, for up to 1 year.

Ranch Dressing Mix

7 teaspoons parsley flakes
4 teaspoons salt
1 teaspoon garlic powder

**For dressing:
Mix 2 tablespoons dry mix with 1 cup mayonnaise and 1 cup buttermilk or sour cream.
**For dip:
Mix 2 tablespoons dry mix with 2 cups sour cream. Mix up a few hours before
serving, so the flavors all blend.
 

Crab Boil Spice

¼ cup pickling spices
¼ cup sea salt
2 Tablespoons mustard seeds
2 Tablespoons whole black peppercorns
2 Tablespoons hot red pepper flakes
1 Tablespoon celery seeds
1 Tablespoon minced dried chives
2 teaspoons ground ginger
2 teaspoons dried oregano
5 bay leaves

Add pickling spices, sea salt, mustard seeds, peppercorns, pepper flakes, celery seeds, chives, ginger, oregano, and bay leaves to the bowl of a food processor fitted with the metal blade. Pulsing, process until the mixture forms a coarse powder.

For cooking shrimp, add ¼ cup of the spices, along with 2 teaspoons salt, to a large
saucepan of boiling water or half water and half beer.

For lobster or crab, use 1 part distilled white wine vinegar to 3 parts water. Add the seafood and cook for 2 minutes, or until just cooked through. Remove the seafood and serve or chill.
 

Pumpkin Pie Spice

Outback Steakhouse Steak Seasoning

1 envelope Taco Seasoning
1 envelope Good Seasons Italian dressing
1 tablespoon olive oil
8 oz. Coca Cola
8 oz. beer
2 tablespoon brown sugar

Combine taco seasoning and Italian dressing mix.
Combine Coca Cola and beer and brown sugar.
Pierce steak with a fork, rub with oil, and coat with seasoning. Pour Coke mixture around steak in deep plastic or glass container and cover with plastic wrap. Marinade for 2 hours. Let steaks come to room temperature before grilling.
Sprinkle seasoning on again and grill; basting with marinade.
