1 tsp. Allspice
1 tsp. Tarragon
1-1/2 tsp. Sage
1 tsp. Coriander
1 tsp. savory
4 tsp. Salt
1 tsp. Pepper
1-1/2 tsp. Garlic Salt
1 tsp. Garam Marsala OR
1/2 tsp. of cinnamon
5 tsp. Brown Sugar
1 c. Water

In a gallon Ziploc bag, combine spice mix and water, and mix until spices are no longer dry. Add boneless skinless chicken, white or dark meat according to your choice. Let it marinate in the fridge for at least an hour but preferably overnight. Grill or bake until juices run clear. To bake, preheat over to 350°. Bake for 35-40 minutes or until internal temperature reaches 155°. I prefer to grill it (usually about 5 minutes on each side on high heat). Let the meat rest (sit) for ten minutes in tinfoil. This allows the chicken or pork’s moisture to redistribute back in to the center, because heat pulls the moisture to the surface and if you cut the meat immediately you will lose a lot of the juices and the meat will be drier. After resting the meat, I prefer to cut up the chicken into thin pieces and mix the pork or chicken pieces into any juice that has drained from resting.
