1 cup butter (2 sticks)
1 cup sugar
2 egg yolks
2 cups flour

To top cookies:
2 beaten egg whites
About 3/4 cup finely chopped walnuts or other nuts, mixed with a little sugar

Directions:
Directions:
Cream together butter and sugar, then mix in egg yolks, then flour. Chill thoroughly. Shape gobs of dough into logs about 2” long and ¾” thick. You may wish to chill again after shaping, as cookies will spread less during baking.

Dip tops of logs in beaten egg white, then in sugared nuts. Place nut side up on ungreased baking sheet, or use parchment paper liners. Bake at 350º for 10-12 minutes, until edges are lightly browned.

This recipe was given to me by a woman in a community college class I took years ago. She wasn’t someone I noticed at first, but from her I learned that every person has a fascinating story if we only take time to listen. These cookies are simple and fun to make, and so delicious it’s hard to stop eating them.
