3 cups brown sugar
1/4 tsp salt
1 tsp vanilla
1 cup evaporated milk
2 1/2 tbsp butter
1/2 cup chopped nuts (optional)

Directions:
Line a large sauce pan with butter. Dissolve and stir until it reaches full boil; brown sugar, milk, salt. Cover and cook 3 minutes or until steam has washed down crystals from sides of the pan. Uncover and cook slowly without stirring to soft ball stage (238º). Remove from. Add the 2 1/2 tbsp butter. Cool to 170º (about 10 minutes). Beat until smooth and creamy. Add vanilla and nuts. Pour in a buttered pan and let cool. When firm, cut and cover with foil.
