1¼ cup sugar

6 Tbsps. cornstarch

2 cups water

⅓ cup lemon juice

3 egg yolks

1½ tsps. lemon extract

2 tsps. vinegar

2 Tbsps. butter


Meringue Topping

1 Tbsp. cornstarch

2 Tbsps. cold water

pinch of salt

⅓ cup boiling water

3 egg whites

6 Tbsps. sugar

1 tsp. vanilla

Directions:
Directions:
Mix sugar and cornstarch together in the top of double boiler. Add the 2 cups water. Combine egg yolks with lemon juice and heat until well mixed. Add to the rest of the sugar mixture. Cook over boiling water until thick, about 25 minutes. This does away with starchy taste. Now add the lemon extract, butter and vinegar and stir thoroughly. Pour mixture into pie shell and let cool. Add meringue.


Never Fail Meringue

Blend cornstarch and cold water in a pan. Add boiling water and cook until clear and thick. Let it cool. Beat at high speed, beat egg whites until foamy. Gradually add sugar and beat until stiff but not dry. Turn mixer to low, add salt and vanilla. Beat in cold cornstarch mixture. Turn mixer to high again and beat well. Spread on pie.

Bake 350ºF for 10 minutes or until lightly browned.
