2 large sweet potatoes
1 lb ground turkey
1 yellow bell pepper
1 c red onion, diced
1 jalapeno (optional)
1/2 c shredded cheese (original recipe calls for mozzarella, I use Mexican blend)
1/2 c water
1/4 c cilantro, chopped
2 Tbsp olive oil
1 1/2 Tbsp cumin
1 Tbsp minced garlic
1 tsp chili powder
1/2 tsp salt
1/4 tsp pepper
pinch of cayenne

Directions:
Directions:
In a large skillet, heat olive oil over medium-high heat. Add garlic and cook for 1 minute and then add ground turkey. Use a wooden spoon to break apart meat and continue cooking for roughly 8 mins until browned.
Add cumin, chili powder, salt, and pepper.
Add onion and bell pepper, cook for 3-4 mins
Add diced sweet potato and water. Stir and cover with a lid for 6-8 minutes until the sweet potato softens. Add additional water as needed to keep the meat from drying out.
Remove lid, top with shredded cheese and allow to melt. Remove skillet from heat and garnish with fresh cilantro.
