1 lb ground beef
1 yellow onion
4 oz kale
1/2 oz basil
4 oz fresh mozzarella
2/3 can of crushed tomatoes
10 oz fusilli or rotini pasta
2 cloves garlic - minced
1 tsp oregano
1/4 c panko breadcrumbs
red pepper chili flakes to taste

Preheat oven to 400º
Chop the onion, tear mozzarella into small pieces. Remove and discard kale ribs and stems and then coarsely chop leaves. Coarsely chop basil. Boil pasta for 9-11 mins. Heat olive oil over medium heat, add onions and cook for 4-5 minutes. Add beef, garlic, oregano, and chili flakes. When meat is browned add kale. Toss for 3-4 minutes and season with salt and pepper. Combine fusilli, basil, beef mixture, crushed tomatoes, and half of the mozzarella. Transfer to oiled baking dish. Sprinkle with breadcrumbs and remaining mozzarella. Cook for 8-10 minutes
