2 C. Flour 2 tsp soda 1 tsp cinnamon 1 tsp salt 3 eggs 2 C. Sugar 1½ C. Oil 2 C. Shredded carrots 1 C. Crushed pineapple 1 C. Chopped nuts 1 C. Coconut
Sift together flour, baking soda, cinnamon, & salt. Cream together eggs, sugar, and oil and mix together with dry ingredients. Add carrots, pineapple, coconut, and chopped nuts. Mix well. Bake at 350º for 35 minutes. (I usually bake a little longer).
