1 whole chicken cut into pieces
1 onion, peeled leaving the last inner peel on it
1 carrot, washed and ends cut off. Partially peeled
1 rib celery, washed and leaving some of the leaves at the top
1 parsnip, washed and peeled, leaving it whole
Salt and pepper to taste
A small bunch of parsley

Directions:
Place all ingredients in a large soup pot. Boil lots of water and pour the water over the chicken and vegetables in the pot. Add enough water to be about 1-1/2" over the top of the chicken. Bring to a boil and reduce heat to simmer.

Simmer for a hour or so until the chicken is well done and the broth is tasty. Remove the chicken and vegetables from the pot and run the broth through a sieve removing any bits that remain. Serve in a soup bowl with a homemade matzo ball, a few small slices of cooked carrot and a few bits of fresh parsley to decorate.

Use the leftover chicken and vegetables to add and make a hardy soup. You can also add soup noodles.

Grandma May showed me how to make this soup one day long ago. Leaving the peels on the vegetables adds that special flavor.
