April Reilly

- 1 cup golden delicious red apple - with peel
- 1 cup mango
- 1 cup white kidney beans
- 4 tbsp finely chopped red onion
- 2 tbsp chopped fresh parsley
- 2 tbsp chopped fresh cilantro
- 1-2 small hot peppers, seeded and diced very fine (hot peppers are optional)
- 4 tbsp red balsamic vinegar
- 2 tsp granulated sugar
- 1 large or 2 small rounds of brie
- 1-2 baguettes
- Olive or vegetable oil

Cut up apple, mango, and kidney beans into very small pieces, about the size of a peanut.

Mix all ingredients together (except oil, brie & baguettes) and chill.

Take one large or 2 small rounds of brie and oil both sides. Place face down on bbq or on baking sheet in oven. Heat until top rises or is squishy to touch - about 5-10 minutes.

Meanwhile, cut up 1-2 baguettes into small pieces. dab with olive oil on one side (optional) and grill for a few seconds.

To serve, cut out some brie and spread it onto the bread then spoon out fruit mix on top, mmmmm delicious!
