2 teaspoons extra-virgin olive oil
1 small onion, diced
½ cup whole-grain, quick cooking brown rice
1 cup vegetable broth or low-sodium chicken broth
1/3 cup water
¾ cup sliced almonds
2 tablespoons chopped fresh parsley
salt & freshly ground black pepper

Directions:
Directions:
Dry roast nuts for about 5 minutes in 350º oven or in small stove top pan. Heat oil in medium saucepan over medium-low heat. Add onion, cover, and cook until softened, about 3 minutes. Add rice and stir until well coated. Add broth and water, bring to a simmer, cover, and cook about 30 minutes until rice is tender and water absorbed. Stir almonds into rice and season with salt & pepper. Add parsley just before serving.
