4 chicken breasts, cut into chunks
2 tbsp groundnut oil
1 onion, chopped
2 cloves garlic, crushed
2 tbsp peanut butter
2 tsp salt
1 tbsp flour
1 pt coconut milk
2 -3 tsp chilli powder
2 tsp ground cumin
2 tsp ground coriander
2 tsp ground ginger
Lemon rind

Warm oil, fry onion and garlic. Add peanut butter and salt. Mix spices together and add to the mixture. Add flour, stir and cook until well blended. Gradually pour in the coconut milk, stirring all the time. Add chicken, then lemon and simmer for 45 minutes.
Garnish with fresh coriander.
