Caramel Flan Recipe

3/4 cup of sugar
4 eggs
1 3/4 cup of water
1 ( 14oz) can of sweetened condensed milk (NOT Evaporated MILK)
1/2 tsp of vanilla extract
1/8 tsp salt

1 round baking pan ( like a cake pan)
broiler pan

Directions:
Preheat oven to 350º
in heavy skillet ( I use an old frying pan and an old wooden spoon) over medium heat and cook sugar, stirring it constantly so it melts but does not burn ( should be a melted caramel color)

pour carefully into the round baking pan, swirl it so it coats the bottom of pan- let it sit ( it will harden but that is what is should do)

in a small mixing bowl beat eggs and stir in vanilla, salt, water and condensed milk

Pour on top of the hardened caramel

next- take a broiler pan and put the flan round pan in it. Add about an inch or more ( Up to half way of pan) of hot water.
Put in oven carefully
cook for about 50-60 minutes until toothpick comes out clean

remove from oven CAREFULLY as water is HOT
remove the pan slowly and carefully - let it cool for about an hour
Once cooled add a paper towel on top and chill in fridge
remove when cold and it is ready to eat.
