2 tbspn olive oil
350g new potatoes cut into 0.5cm slices
1 red onion, cut into thin wedges
2 cloves garlic, sliced
2 sprigs oregano
275g Peppadew Sweet Piquant Peppers, drained
¾ tbspn capers, drained
225g tomatoes cut into wedges
2 large cod fillets

1. Preheat oven to 200º. Toss the potatoes and 1 tbsn oil over a parchment lined roasting tray. Season and roast for 10 minutes.

2. Stir in the tomatoes, onion, garlic, oregano and peppers; drizzle with more oil and roast for another 10 minutes

3. Add the capers to the ray, then nestle in the cod. Drizzle with remaining oil over the fish; season. Roast for a final 10 minutes, until the fish is fully cooked through. Remove oregano sprigs and serve.
