1/4 oz Rosemary
12 oz pork tenderloin
2T cranberry jam
2tsp Dijon mustard
1 chicken stock concentrate
1 thumb ginger

Directions:
Directions:
Pat pork dry. Heat a drizzle of oil over medium high heat. Add pork and sear turning occasionally until browned all over, 4-8 minutes. Transfer to baking sheet and bake at 450 10-12 minutes until pork is cooked through. Transfer pork to cutting board to rest. Heat drizzle of oil. Add minced ginger and Rosemary. Cook until fragrant about 30 seconds. Stir in jam stock concentrate and mustard and 1/4 c water. Simmer until slightly thickened, 2-3 minutes. Remove from heat and stir in 1T butter until melted. Slice pork and drizzle with sauce.
