2 large chicken breasts, butterflied to make even thicknesses
1 cup Panko bread crumbs
1 TBSP olive oil
1 egg
3 TBSP hot sauce (optional)
1 TBSP flour
1/2 tsp.. garlic powder
Salt and pepper

Directions:

Toss panko with oil in a bowl until it’s evenly coated. Microwave, stirring frequently until it’s a light golden brown 1-2 minutes. Transfer to a shallow bowl.

Whisk egg, hot sauce if using, flour, garlic powder, 1/8 tsp salt, 1/8 tsp pepper together in a second shallow bowl.

Butterfly or pound chicken to a uniform thickness. Halve crosswise.

Dredge chicken in egg mixture, then coat with panko, pressing to adhere.

Spray base of basket with vegetable oil or use a perforated parchment. Arrange chicken in basket spaced evenly apart.

Bake 400º 6-8 minutes. Flip, cook another 6-8 minutes until chicken is 160º

This basic recipe is amazing and easy to change up.
- You can add lemon zest and garlic to the crumbs and make crunchy cod filets. Or
- After toasting the crumbs, add grated Parmesan cheese and garlic.
- Instead of panko, grind up herb stuffing mix (Pepperidge farm) and add Parmesan and garlic to the crumbs.
- Try adding dry ranch dressing mix to the crumbs after toasting.
- Try a mixture of 1/2 panko and 1/2 finely ground pecans.

Note...always add the spices to the crumbs after toasting them or they will burn.
