Ingredients: 3 eggs, separated 3 T. sugar 2 T. sugar 450 grams mascarpone cheese 2 T. rum pinch of salt 2 c. heavy cream 1 pkg. vanilla sugar 2 pkg. whipping cream stabilizer ½ c. very strong coffee ½ c. Kahlua liqueur 1 pkg. lady fingers (about 30) cocoa grated chocolate

Directions:1st. step : Beat 3 egg yolks and 3 T. sugar till frothy. Add 450 grams mascarpone cheese and rum. 2nd. step: Beat egg whites and salt till foamy. Increase speed and add 2 T. sugar and beat till glossy. 3rd. step: Whip 2 cups of heavy cream, add vanilla sugar and stabilizer until it holds a firm shape. Add whip cream mixture to cheese mixture in 3 stages, fold in gently. Then add egg white mixture all at once and fold gently. Combine coffee and kahlua. Put a little cream mixture in the bottom of the bowl. quickly dip lady fingers in the coffee mixture and layer over the cream mixture, then add another layer of cream mixture. Sprinkle lightly with a good quality cocoa. (Use a little screen type strainer) Repeat layers. Should get 3 layers of the fingers. Top with the sprinkle of cocoa and top that with a good quality grated chocolate. |

Notes: Be careful to just dip the lady fingers very quickly, not to get them soggy. Needs to be made a day ahead for great flavour. I use a glass bowl, 10 inches in diameter and 5 inches tall.
