1 quart fresh, shucked oysters
2 cups crushed saltine crackers
1 cup panko bread crumbs
1 cup unsalted butter, melted
1 cup heavy cream
2 tsp. sea salt
1 - 2 tsp. pepper (Dad usually went very heavy on the pepper)

Directions:
Directions:
Drain oysters, reserving the liquid. Spay 9" x 13" glass casserole with nonstick cooking spray.
In mixing bowl, combine cracker crumbs, bread crumbs and melted butter. Pou crumb mixture into 10-inch skillet and cook over medium heat for about 10 minutes. Place half the crumb mixture add the drained oysters.
Heat cream and oyster liquid until almost boiling. Remove from heat and add salt and pepper. Pour over oystersin casserole. Top with remaining crumb mixture. Cook for 15 minutes at 400º until bubbling. Serve immediately.

This was Dad's signature Thanksgiving dish. He loved making it and he loved eating it. Truly his favorite thing at Thanksgiving!
