Extra large zucchini, sliced
1 c. white flour
1 tsp. salt
1 tsp pepper

2 eggs, beaten

Directions:
Directions:
Preheat skillet to 350 degrees with oil.

Mix together flour, salt and pepper. and place in bowl.

Add beaten eggs into shallow dish.

Dip sliced zucchini into scrambled egg and then into flour mixture.

Drop carefully zucchini into heated skillet and fry til browned and tender!

The larger the zucchini the better. Slice size is 1/2 inch to totally cook evenly.
