1 cup water
2½ cups granulated sugar
1 pinch salt
4 lemons, zest in strips
3 cups fresh lemon juice

Directions:
Directions:
Combine water and sugar in a large saucepan. Cook over medium heat, stirring constantly, until sugar is dissolved. Add salt and lemon zest. Raise heat and bring to a boil. Boil for 5 minutes.

Cool the mixture. Then add lemon juice, mix and stir in a jar in the refrigerator.

Remove the lemon zest before using.

For lemonade add at least 3 Tbsp lemon syrup to a glass of water or club soda (just add to taste). Add ice, then garnish with fresh or frozen lemon slices.

Add 2-3 Tbsp mashed fresh strawberries for a change of taste. Makes one quart.
