One 8 or 9" prepared (baked) pie crust

1½ cups sugar
⅓ cup cornstarch
1½ cups water
3 egg yolks, slightly beaten
3 Tbsp butter
⅓ cup fresh lemon juice (NO RealLemon)
1 Tbsp grated lemon rind

Meringue
¼ tsp cream of tartar
6 Tbsp sugar
3 egg whites

Directions:
Directions:
Heat oven to 400º. Mix sugar and cornstarch in sauce pan. Gradually stir in the water. Stir over medium heat until mixture thickens and boils. Boil one minute.

Slowly stir some of the hot mixture into the slightly beaten egg yolks to temper. Once mixed, beat into remaining hot mixture in the sauce pan. Then boil for one minute, stirring constantly. Remove from heat and continue to stir until completely smooth.

Blend in butter, lemon juice and lemon rind. Pour hot filling into baked pie shell. Bake 8 - 10 minutes until the meringue is a delicate brown.

Meringue

Beat egg whites with cream of tarter until frothy. Gradually beat in sugar. Beat until stiff and glossy, then spread over pie. It's really important to make sure you meringue completely covers the surface of the pie or it won't work. Bake 8 - 10 minutes until the meringue is a delicate brown.
