2 Cups All Purpose Flour
1 1/2 Cup Sugar
2 tsp baking soda
dash salt
2 eggs (beaten)
1 can crushed pineapple

Frosting
1 1/2 cup sugar
1/4 cup (1 stick) butter
1 can evaporated milk (not sweetened condensed milk)
1 1/2 cup shredded coconut
1 cup chopped pecans
1 tsp vanilla

Cake
Mix flour, sugar, baking soda and salt together. Add beaten eggs and pineapple, including juice. Mix well and pour into a seasoned 9 x 13 baking dish. Bake at 350 for 30 minutes.

Frosting
I start making the frosting when the cake has about 15 minutes left to bake.
Mix all frosting ingredients except vanilla together in a 2 quart sauce pan and bring to a boil. Cook for 6 minutes. Remove from heat and add vanilla. Pour over cake as soon as you remove it from the oven.

Let cool.
