1 Pound Broccoli
8 Ounces Butter
1 Cup Flour
1 Quart Chicken Stock
1 Quart of Half and Half or Milk
1 Teaspoon Salt
¼ Teaspoon Pepper

Directions:
Directions:
Clean broccoli; cut into ½ inch pieces. Steam broccoli in 1 cup of water until tender. Do not drain. Blend half of broccoli in blender and mix with the broccoli pieces. Set aside. Melt butter in saucepan over medium heat. Add flour to make a thickening. Cook 2 to 4 minutes. Add chicken stock, stirring with wire whisk and bring to a boil. Turn heat to low. Add broccoli, half and half (milk), salt and pepper. Heat, but do not boil.

To make it Cheese Broccoli Soup, add grated cheese during the low heat cooking. A slow heat for about an hour makes the best soup.
