12 small pie crust
12 ounces cream cheese, softened
1 (15-ounce) can pure pumpkin
1 cup granulated sugar
2 large eggs, plus 1 egg yolk, lightly beaten
4 tbs. unsalted butter, melted and cooled
1 cup heavy cream
1 tbs. bourbon
2 tsp. vanilla extract
2 tsp. pumpkin-pie spice
1/4 tsp. salt
Sweetened whipped cream, for serving

Beat the cream cheese in a large bowl with a mixer on medium speed until smooth. Add the pumpkin and beat until combined. Add the sugar and beat until smooth. Add the eggs and egg yolk, butter, heavy cream, bourbon, vanilla extract, pumpkin-pie spice, and salt and beat until combined, scraping down the bowl as needed.

Pour the filling into the cooled crust. Transfer pie plate to a foil-lined baking sheet and bake until the edges are set but the center is slightly wobbly, 45 to 50 minutes. Let cool to room temperature on a wire rack. Serve with sweetened whipped cream.
