BEEF:
5 pounds lean beef
1 large onion stuck with 4 cloves
3 to 6 large carrots
3 sticks celery
2 to 3 leeks
6 sprigs parsley
2 cloves garlic
2 bay leaves
1/2 teaspoon thyme
salt and pepper

HERB MAYONNAISE:
1 sieved hard-boiled egg
1 fresh egg yolk
1 Tablespoon Dijon mustard
1 Tablespoon white vinegar
3 Tablespoons shallots, chopped
1 Tablespoon parsley, chopped
1/2 teaspoon tarragon
1 cup olive oil
1/2 teaspoon Worcestershire sauce

Directions:
Directions:
Combine all the ingredients for the beef in one large pot. Cook the beef till tender.
Discard the vegetables and slice the meat thinly to serve, cold or warm.

HERB MAYONNAISE:
Combine the first 8 ingredients in a blender, food processor or mix with a hand mixer.
Then slowly add the oil to make a mayonnaise.
Once the mayonnaise is thick, stir in the Worcestershire sauce to serve.
