Boiled Beef with Herb Mayonnaise Recipe

5 lb. lean beef
1 large onion stuck with 4 cloves
3-6 large carrots
3 sticks celery
2-3 leeks
6 sprigs parsley
2 cloves garlic
2 bay leaves
1/2 tsp. thyme
salt and pepper

Herb Mayonaise:

1 sieved hard-boiled egg
1 fresh egg yolk
1 Tbl. Dijon mustard
1 Tbl. white vinegar
3 Tbl. chopped shallots
1 Tbl. chopped parsley
1/2 Tsp. tarragon
1 cup olive oil
1/2 Tsp. Worcestershire sauce

1. Combine all the ingredients for the beef in one large pot. Cook the beef till tender. Discard the vegetables and slice the meat thinly to serve, cold or warm.

2. Combine the first 8 ingredients in a blender, food processor or mix with a hand mixer. Then slowly add the oil to make a mayonnaise. Once the mayonnaise is thick, stir in 1/2 Worcestershire sauce to serve.
