1 box yellow cake mix
1 package instant vanilla pudding
1 1/3 cups water
4 eggs
1/4 cup oil
2 cups coconut
1 cup walnuts (chopped)

Coconut Cream Cheese Frosting:
4 tbsp butter
2 cups coconut
1 (8 oz) package cream cheese
2 tsp milk
3 1/2 sifted confectioners sugar
1/2 tsp vanilla

Directions:
Directions:
Preheat oven to 350 degrees.
Grease and flour three 9 inch circle cake pans.
In a large bowl, blend cake mix, pudding, water, eggs and oil. Beat at medium speed for 4 minutes. Stir in coconut and nuts. Pour into the pans. Bake for 35 to 40 minutes.

Coconut Cream Cheese Frosting:
Melt 2 tbsp butter in skillet. Add coconut and stir constantly over low heat until golden brown. Spread coconut on an absorbent paper towel to cool. Cream 2 tbsp butter with cream cheese. Add milk and sugar alternately, beating well. Add vanilla. Stir in 1 3/4 cups coconut. Spread on tops of cake and sides of cake layers. Sprinkle with browned coconut.
