6 large eggs
1 cup castor sugar (granulated sugar)
2 cups full cream milk
1 cup cream
½ to 1½ cups brandy, rum, cognac (or liquor of your choosing)
Freshly grated nutmeg

Directions:
Directions:
1. Separate the eggs. Place the yolks in a medium bowl and the whites in a large bowl. Cover the whites and refrigerate until needed.

2. Whisk the yolks with the sugar until the mixture is smooth and creamy.

3. Whisk in the milk, cream and liquor until combined.

4. Cover the bowl and refrigerate for a least 1 hour.

5. Just before serving, whisk the egg whites (preferably with a high speed mixer) until the whites form stiff peaks.

6. Pour the beaten egg whites into the bowl with the eggnog and gently fold the mixture together.

7. Transfer the eggnog to a punch bowl and serve with a grating of nutmeg over the top.

This is a family favourite when we decorate the Christmas tree, whilst watch Jim Carey's 'The Grinch' together on Christmas eve and on Christmas morning with Ham, Cheese and Tomato Croissants.
