3 oz. chilled Prosecco (or Cava)
2 oz. Aperol
1 oz. club soda or seltzer, chilled
a slice of orange for garnish

Directions:
Directions:
Chill a large wineglass or brandy snifter. Fill halfway with ice cubes. Add Aperol, Prosecco and club soda in that order.

Stir very gently and garnish with orange slice.

Serves 1.

I first noticed this drink in the bar of our beach hotel in Taormina, Sicily in 2014. Attracted by the beautiful orange colour, I discovered a new favourite. When I returned to Toronto, the Aperol Spritz was just starting to appear on cocktail menus, even at the AGO members' lounge. My outings group & I all ended up ordering them when we ate lunch there. Still a great summer cocktail and very popular with the cognoscenti. A word of warning...don't follow the recipe on the Aperol bottle. It has too much soda water.
