1 whole chicken or parts (legs and thighs work great)
2 stalks of celery, chopped
2-3 carrots, chopped
chopped parsley (optional)
sprigs of dill
1 whole onion
salt & pepper to taste

1 whole chicken or parts (legs and thighs work great).

Put in stockpot and fill with water.

Add chopped celery, carrots, parsley, dill and 1 whole onion (with outer brown skin still on - this will give your soup great color! Just remove brown peels before serving).

Add salt and pepper.

Bring to boil and then let simmer on a low flame for a couple of hours, stirring occasionally. The longer it summers, the better it tastes.

You may need to add a little water and more salt if a lot evaporates.
