Toby's Tzimmes Recipe (great to serve at Jewish Holidays, Rosh Hashanah, Passover, Chanukah)

4lbs carrots
1½ lb beef short ribs
2 Tbsp flour
2½ tsp sugar
pinch of salt
3 Tbsp brown sugar
honey (to taste)

Directions:
Directions:
Slice carrots thinly and place in a large pot with short ribs. Fill pot with water, almost to the top of the carrots. Bring to a boil then cover and lower to a simmer. Cook for 2 hours until meat is tender. May boil uncovered if too watery (or pour some water off when done).

Remove meat and put aside. In a small bowl mix four, sugar and pinch of salt, brown sugar and honey (to taste). Add some liquid from the carrots to make a paste. Add to carrots and boil for 5 minutes. Add meat back into pot and stir. Can then serve or refrigerate for one week.

We met Toby and Mitch Kriss when we moved to Buffalo Grove, IL in 1985 at Temple Chai in Long Grove; we were both expecting our second children when we met. She and her family quickly became our family, too. Coincidence that we were all from NY (Toby, her husband, Mitch, Carl and me). Since we were far away from blood relatives, and because our children were similar ages, we began celebrating all the Jewish holidays together. To this day, if we are not with our children and grandchildren, we are together on these joyful occasions; even Thanksgiving! The Kriss family is the family we chose, rather than the family we were born into. They continue to be part of our lives today.
