2 cups of white sugar
¾ cup + 2 tbsp. of water

¼ cup + 1 rounded tbsp. of powdered meringue

4 cups of high ratio shortening (also called frosting shortening)
2 cups powdered sugar
1 tbsp. vanilla
sprinkle of salt

Directions:
Directions:
-In a microwave safe bowl, heat the white sugar and water to 150ºF. Each microwave is different, but start with 2 minutes, then add 30 seconds each time until your sugar and water get to the right temperature. It is important to make sure the mixture is at the correct temperature for the texture of the frosting to come out right.
-Put the hot water and sugar mixture into a mixing bowl and mix for a couple minutes to make sure the sugar is incorporated into the water.
-Then add the powdered meringue and slowly mix until wet.
-Beat mixture to stiff peaks (about 3 minutes, but it can vary) and then set aside.

In another mixing bowl
-Mix the shortening, powdered sugar, vanilla, and salt. Mix on Kitchen aid mixer #6 until fluffy (about 3 minutes, but it can vary)

Add mixture in the first bowl to the mixture in the second bowl and mix for about 3 minutes until well combined. Don't over mix.

This is a recipe Meme came up with herself and is known for it. Meme used to do cakes for every occasion for her family and friends and sometimes just when someone needed a pick me up. I remember learning how to decorate cakes with Meme and how to make this recipe. Whenever I make this frosting, I always think of her.
