1 C water
1/2 C butter

1 C flour
1/2 tsp salt

4 eggs

Directions:

Preheat oven to 400º
Prepare cookie sheet with parchment

In med. saucepan, heat water and butter to rolling boil.
Reduce heat to low.
Whisk in flour and salt vigorously until mixture leaves the sides of pan.
Remove from heat.
Cool slightly.

Add eggs to flour mixture, one at a time.
Beat until smooth. (you may transfer to a mixer or use a hand mixer)

Drop by spoon, 3" apart and bake for 35 min or until puffed and golden brown.
Cool completely and fill:
custard, chicken salad, whipped cream, pie filling or ice cream

Uncooked batter may be frozen for up to a month. Drop onto cookie sheet, freeze, drop into labeled Ziploc, and seal. To bake, thaw for one hour or so, and bake as directed.

You can make these any size you like, they're basically German pancakes and can be made for a fun breakfast, with scrambled eggs etc...
