Ingredients: -1lb of ground beef or turkey - 5 bell peppers (any color is fine) - 28oz can of diced tomatoes - 1 chopped zucchini - 1 cup of cooked white rice - 3-4 tbsp of olive oil - 1/4 cup of parmesan cheese -1/4 cup of shredded mozzarella cheese - 1-2 tbsp of Italian seasoning - salt and pepper to taste

Directions:1. Preheat oven to 357 ºF 2. Cook white rice to directions on package 2. Cut the top off and and clean out the inside of each bell pepper 3. In a large nonstick skillet add olive oil and ground meat 4. Add chopped zucchini 5. cook until zucchini is almost tender and meat is no longer pink 6. Mix together and add salt and pepper 7. Add the can of diced tomatoes and simmer for 3-5 minutes 8. Mix in parmesan cheese and white rice. 9. Stir in pan and remove from heat 10. Scoop the meat and rice filling in the bell peppers 11. Sprinkle shredded mozzarella cheese on top 12. Put filled bell peppers in a deep casserole dish and place in heated oven. 13. Cook for 15- 20 minutes 14. Remove from oven and enjoy! |
