- 1 Tbls Olive Oil
- 1 Large Onion - chopped
- 2 Cloves Garlic
- Red Pepper Flakes - to taste
- Ground Black Pepper - to taste
- 1 lb Hot Italian Sausage, removed from skin or bulk
- 1/2 tsp chopped fresh Basil
- 1/4 tsp smoked Paprika
- 6 cups Chicken Broth
- 4 cups Kale - chopped
- 15 oz can Cannellini beans - drained (for best flavor, use cooked/dry beans)
- 1 cup cut up yellow or red potatoes

- Heat oil in a large stockpot over medium heat until the oil shimmers; cook & stir onion, garlic, red pepper flakes, and black pepper until onion is translucent.

- Mix sausage, basil, and paprika together in a bowl.

- Stir sausage mixture into onion mixture; cook and stir until sausage is browned nd fully cooked, 5 to 10 minutes.

- Add chicken broth, kale, cannellini beans, and potatoes to sausage-onion mixture; lower heat to medium low. Cover & simmer until potatoes are tender, 15-20 minutes.

- Serve with bread, enjoy!
