1 lb hot sausage
1/2 cup tops of green onions, chopped
12 6-inch corn tortillas, divided
3 cups shredded cheddar cheese, divided
5 eggs, beaten lightly
2 1/2 cups milk
1/2 cup salsa of choice, plus extra
1 7-oz. can diced Ortega brand chilies

Directions:
In large saucepan, brown sausage with green onions. Drain excess grease. Layer 4 corn tortillas in greased 8x12 inch pan. Top with half of sausage mixture and 1 cup cheese. Repeat to form second layer. Top this layer with remaining 4 corn tortillas. Combine eggs, milk, salsa and diced chilies in bowl, pour over layers and top with remaining 1 cup cheese. Cover and refreigerate at least 5 hours or overnight.
Preheat oven to 350ºF. Bake 45 to 60 minutes, until knife comes out clean. Serve with extra salsa.
