Sweet and Sour Sauce


Ingredients:

½ cup packed brown sugar
1 tbsp. cornstarch
½ tsp. powdered ginger
½ cup red wine vinegar
1 cup pineapple juice
(pineapple chunks optional)
1 tbsp. soy sauce

Directions:
Directions:
In a saucepan, mix brown sugar, cornstarch, and ginger.
Place on medium heat.
Add red wine vinegar and pineapple juice.
Bring to a boil.
Add soy sauce.
Cook until thickened.
(Optionally add pineapple chunks.)
 

Sweet and Sour Chicken

1 cup of onion ring batter
Water
4 medium boneless, skinless chicken breasts
½ cup of cooking oil

Directions:
Directions:
Mix onion ring batter with water.
Cut chicken into bite-sized pieces.
Heat oil in a large pan.
Mix chicken into the batter, then place in hot oil.
After the batter is golden brown, flip the chicken.
Cook until both sides are golden.
Place cooked chicken on a plate with a paper towel to absorb oil.
Monitor the heat of the oil. The chicken will cook faster as you progress, but don't let it get so hot that it burns.
You'll want to cut into a piece from every batch until you get the hang of it to ensure that the chicken is cooked.

Serve with rice and sweet and sour sauce
