2 lbs carrots (sliced)
1/2 cup butter (divided)
1 (6 oz) shredded parmesan cheese
1/4 cup fresh parsley
1/2 cup crushed crackers

Directions:
Directions:
Preheat oven to 350 degrees.
Cook carrots until fork tender. Drain carrots and pour into a casserole dish. Melt 1/4 cup butter. In a bowl mix melted butter and cheese together. Add parsley and mix well. Pour the mixture over the carrots. Top with cracker crumbs and melt 1/4 cup butter and drizzle over the cracker crumbs. Bake uncovered for 25 to 30 minutes.
