1 cups chicken broth
¼ tsp. soy sauce
¼ tsp. sesame oil (optional)
1 tsp. cornstarch
2 tsp. water
1 egg, beaten
Chives to garnish
Salt and ground white pepper to taste

Directions:
Directions:
In a medium pot, combine chicken broth, soy sauce, and (optionally) sesame oil.
Bring to a boil.
In a small bowl, mix cornstarch and water.
Pour into boiling broth.
Add salt and white pepper to taste.
In a small bowl, beat the eggs.
Remove broth from heat. (You don't want it to be boiling.)
Slowly stir the broth in one, circular direction. The faster you stir, the smaller the egg noodles will be.
While stirring, pour the egg into the broth - do not over stir. The residual heat will cook the egg.
Serve and garnish with chives.
