13 egg whites
¼ tsp. salt
1½ level tsp. cream of tartar
1¼ c. powdered sugar
1¼ c. granulated sugar
1½ c. cake flour
1 tsp. vanilla or almond extract

Directions:
Directions:
Beat egg whites (and salt) adding cream of tartar until stiff. Fold in sugars a little at a time, then flour. Add flavoring.

Bake at 325º for 1 hour in angel food cake pan. Turn upside down and cool.
