Chipped Ham on Toast (Or "$#@! on a Shingle") Recipe

Ingredients: Approx. (more or less) 1 lb of ham cut in 1 inch (bite size) pieces
Sliced bread
1 Tbsp Flour
1 Tbsp Butter
! c. milk (at room temperature)
Salt and Pepper
Optional: 1/4 tsp. Cayenne (if you like it with a little kick)

Directions:Put bread into toaster
Melt butter in a large sauce pan.
Gradually sprinkle flour into the butter.
Cook flour in butter over medium heat, constantly stirring for approx. 3-5 min.
Slowly drizzle milk into mixture.
Add ham and cook mixture until desired thickness 5-10 min.
Add salt and pepper (and cayenne) to taste.
Serve ham mixture over toast. |

Notes: At our house, we treat a ham like the Apache treated the great buffalo, we eat the whole thing.
First we serve the ham in slices with scalloped potato's,
then it feeds us in the form of sandwiches for days after.
After we can't slice it anymore, we chip the rest of the meat off the bone and use for $#@! on a shingle.
Finally we use the remaining ham bone to make Cuban black bean soup.
