Dash of oil
1 large russet potato, shredded
of a yellow onion
3 eggs
Adobo to taste

Directions:
Directions:
Heat oil in pan over medium-high.
Grate potatoes (or use a food processor to shred).
Grate, shred, or dice onion.
Mix potato and onion, and then spread evenly in pan.
Crack the three eggs over the potato mixture and lightly mix in.
Sprinkle adobo over the omelet.
Cook until the edges of the potatoes are browned, then flip.
Sprinkle adobo on this side, too.
