About 1 dozen mushrooms
1 bunch fresh chives (can use green onions)
¼ lb prosciutto or deli ham
¼ tsp. Garlic powder or 1 fresh garlic clove
Handful fresh spinach
Parmesan cheese
White wine
Butter

Directions:
Directions:
Separate stems from mushroom caps. Chop stems. sauté ham, chives, garlic powder, and chopped stems in butter until tender. Add chopped spinach and ½ c. White wine. Simmer and reduce liquid (mixture has appearance of dressing or stuffing). Dip mushroom caps in melted butter and place on cookie sheet. Fill with ham mixture. Sprinkle with Parmesan cheese and place under broiler until cheese is golden brown (mushrooms can be prepared ahead). Keep refrigerated until needed, then sprinkle with cheese and broil just before serving.
