6 Eggs

1 Tbs butter

Corn, or vegetable, oil

6 Corn tortillas

1 can refried beans

1 small can of enchilada sauce

Grated Monterey Jack cheese

Directions:
In a large frying pan with about 1/8th inch corn, or vegetable, oil, fry the tortillas in batches until almost crisp and set aside

Preheat oven to 350º

Warm the beans in a microwave safe bowl in the microwave.

Pour out the hot oil and fry the eggs in butter until runny (they will cook more in the oven)

Spread the warm beans on each tortilla, top each with a fried egg and cover with the cheese

Cook in the oven until the cheese is melted

Drizzle enchilada sauce on top and serve.

These were served to us by the pool in Acapulco when I was a kid, along with amazing Mexican French toast. I don't have the recipe for the Mexican French toast.
